Level 2 Culinary Skills Course in Eastbourne. Classes run at East Sussex College Eastbourne Campus, full-time during the day. The course takes one year and covers the practical skills and knowledge needed to work in a professional kitchen. You'll prepare, cook and present dishes in the college's working kitchen, with food served to the public at the Kings Bistro on site. Units cover food safety, knife skills, meat, poultry, fish, soups, sauces, pastry and desserts. Entry requires a minimum of four GCSEs at grade 3 to 9, or completion of the Level 1 course, plus English or maths at grade 3.
Who this course is for
Develop the practical skills and knowledge required to work within a professional kitchen as a commis chef. Units include teamwork, food safety, health and safety, meat, poultry, fish, vegetables, hot sauces, soup, dough products, pastry, and desserts. Working within our professional kitchens, you will prepare, cook and present a range of dishes to be served in the Kings Bistro, which is open to the public.
Entry requirements
Minimum four grade 3-9 at GCSE or successful completion of the Level 1 course, and English or maths at grade 3.

How you will learn
You'll train in the college's professional kitchens, working in real service conditions. Assessment is continuous and based on a portfolio of evidence. Methods include practical observation, work products and questioning. There are no written exams. Your portfolio is built up throughout the year as you cook and present dishes in the kitchen.
