Level 2 Culinary Skills Course in Hastings. Classes run at East Sussex College Hastings Station Plaza Campus, full-time during the day. This culinary skills qualification takes one year to complete. You'll prepare and cook a wide range of dishes, from stocks, soups and sauces to meat, fish, pastry and desserts. You'll also cover food safety, health and safety, menu planning, and dietary requirements, using the campus's fully equipped kitchens and working restaurant. Entry requires a minimum of four GCSEs at grade 3 to 9, or completion of a Level 1 course, plus English or maths at grade 3.
Who this course is for
Our exciting Level 2 course will help you build and strengthen the skills you need to work in a professional hospitality and catering environment. You will begin to fine-tune your cookery skills and learn how to make stocks, soups, and sauces while getting to know different types of equipment used in a professional kitchen.

How you will learn
You'll learn through hands-on practical sessions in the campus kitchens and working restaurant. Assessment is by observation of your practical work and short answer question papers. The course ends with a synoptic assessment that draws together everything you have learned across the year.
