Level 1 Culinary Skills Course in Lancaster. Evening classes run at Lancaster & Morecambe College, part-time over 16 weeks. The course is heavily practical, with around 75% of your time spent cooking in an industry-standard kitchen. You'll cover a range of basic cooking methods, including baking, roasting, grilling, poaching, steaming, and frying, alongside an introduction to kitchen equipment. These culinary skills classes suit anyone fitting study around work or other commitments.

Who this course is for

Delivered at a 75:25 practical to theory ratio, this Level 1 offers a practical cookery experience to develop your skills in an industry-standard kitchen. You’ll be given an introduction into kitchen equipment, as well as preparing and cooking food using basic methods such as; baking, stewing, braising, roasting, grilling, boiling, poaching, steaming, deep and shallow frying.

Assessed through short-answer question papers and timed practical assessments, you will gain a Level 1 City & Guilds certificate in Culinary Skills upon successful completion of the course.

  • You'll identify and use industry-standard kitchen equipment safely.
  • You'll prepare and cook food using baking, stewing, and braising methods.
  • You'll apply roasting, grilling, and boiling techniques to a range of dishes.
  • You'll practise poaching, steaming, deep frying, and shallow frying.

How you will learn

Most of your time is spent in a professional kitchen, with around 75% practical cooking and 25% theory. Assessment is through short-answer question papers and timed practical assessments. Both elements are completed during your evening classes at the college.
