Over 34 weeks, you'll cover cakes, biscuits and sponges, pastry products, dough and batter, hot and cold desserts, chocolate work, and sugar work. Pastry and confectionery is one of the most technically demanding sections of a professional kitchen, and one of the best-paid. This level 2 patisserie and confectionery qualification is awarded by City and Guilds.
