About this course

Level 3 Patisserie and Confectionery Course in Hastings. Classes run full-time at East Sussex College Hastings Station Plaza Campus. To enrol, you'll need to have completed a Level 2 patisserie or catering course and hold GCSE English or maths at grade 4. Over one year, you'll develop advanced skills in complex doughs, chocolate work, hot and cold desserts, and sauce and filling production. You'll also cover food safety, health and hygiene, and working relationships in a professional kitchen.

Who this course is for

This one-year course will let you develop all the advanced skills you need to become a P�tissier. Being a pastry chef is one of the most challenging jobs in the kitchen and we will teach you how to balance an expert knowledge of traditional, classic desserts with technical expertise, creative flair, and a willingness to experiment.

Successful completion of the Level 2 course and GCSE English or maths at grade 4.

You'll train in fully equipped professional kitchens at the Station Plaza campus. Assessment is practical and skills-based, reflecting the demands of a working kitchen. You'll be assessed on your ability to prepare and finish complex patisserie and confectionery products to a professional standard. Written or knowledge-based elements may also form part of your assessment.
